A cold starter follows, lacto-fermented turnip with brocoletti and mole, prepared by Amaury Bouhours, then a warm starter, Cookpot of small spelt with artichoke and black truffle, in a vegetable broth—a signature dish from Alain Ducasse’s universe, here interpreted by the Ducasse sur Seine chef. Next, Jean-Philippe Berens presents seared scallops with leek and jus made of vin jaune. Amaury Bouhours concludes the savory sequence with Grain de Soie grilled veal, Pontoise cabbage, sweet pepper, and cooked hops.
